A while back my sweet neighbor asked to borrow eggs. Of course I sent them to her. Later she delivered a plate of delicious Ukrainian chicken. I just had to have the recipe so a few weeks ago she invited me over to learn how she makes this amazing chicken. She shared with me that it is super simple but used from ingredients that they had readily available in her home country, Ukrain.
So when my neighbor brought some chicken over for me to try I was surprised that she had only used two chicken breasts. This chicken when prepared goes a long way. You can use it for many types of meal. Perfect to cut up in a salad, Chicken Parmesan, fettuccine Alfredo or serve with veggies.
Ukrainian Chicken Recipe
2 Chicken breasts
Garlic salt or 8 garlic cloves minced
4 large eggs
1-2 cups flour
Take your chicken Breasts and cut them in half. Then using your knife and cut them in half again making them thinner. If your Chicken breasts are over sized your may want to slice the chicken breasts into thirds. Once cut cover your chicken with plastic wrap and use a mallet to pound them about 1/4 inch thin.
Sprinkle garlic salt or rub minced garlic on both sides of the chicken piece.
Cover in flour
Dip both sides in Egg
In a Hot pan pour 3 T olive oil. Fry chicken in pan 2 minutes on each side.
Remove from pan. Serve.
If you have leftovers refrigerate and save for later.
Rewarming is best for 30 or so second in the microwave and 1 min on each side in a hot pan.
