Easy Homemade Wheat Bread

Serves: 4 loaves
Ingredients
  • 7 C. Whole Wheat Flour
  • ⅔ C. Vital Wheat Gluten Flour
  • 2½ T. Instant Yeast
  • 5 C. Steaming Hot Water (about 105*)
  • 2 T. Salt
  • ⅔ C. Oil
  • ⅔ C. Honey or 1 C. Sugar
  • 2½ T. Lemon Juice*
  • 5 C. Whole Wheat Flour
  • *Lemon juice helps with the elasticity and is used to replace dough enhancer.
Instructions
  1. Mix together the first 3 ingredients in Mix & Blend Mixer. Add water all at once and mix for 1 minute. Cover for 10 minutes and let sit. This is called sponging. I like to let mine sit for about 10 minutes or so. It gives the yeast time to activate.
  2. Add the next 4 ingredients while mixing. Once they are all mixed start adding the rest of the flour 1 cup at a time.
  3. Depending on the day you may need a little more or less flour. A more humid day will require a little more flour.
  4. Stop adding flour when the dough pulls away from the walls of the bowl. Your dough will be sticky but not
  5. to sticky. If you have an auto knead function Like the Mix & Blend used it now. If you don't knead you dough for 10-12 minutes by hand.
  6. Divide your dough into 4 equal parts. Roll the dough and get any air bubble out of the dough. Roll into a log shape the length of your bread pans. Put onto a greased bread pan. Spray the tops with a little cooking spray. Repeat for the other 3 loaves.
