Homemade Coconut Cream Oreo's Cookies
 
 
Homemade Coconut oil chocolate sandwich cookies
Ingredients
  • 2 Boxes Devil's food cake
  • 1½ C. Coconut oil
  • 1 T. Vanilla
  • 4 eggs
  • Melt Coconut oil. While melting mix cake mixes, eggs and vanilla lightly. Enough to beat the eggs. Pour in oil. Mix together completely. Use a cookie scoop or spoon to make one inch balls. Place on greased cookie sheet and bake at 400* for 7 minutes. Remove from pan to cooling rack. Once cooled pair cookies by size. Make frosting below and make a sandwich.
  • Frosting
  • ¼ C. coconut oil
  • 2 C. powdered sugar
  • 8 oz cream cheese, softened
  • 1 t. vanilla
  • ⅓ C. shredded Coconut
  • Melt coconut oil. Add softened cream cheese and one cup of powdered sugar. Blend together with a mixer. Add remaining sugar and mix. Fold in coconut.
