Homemade Coconut Cream Oreo’s Cookies

Years ago as a teen I was given this recipe for homemade Oreos.  They were so easy,  just a few ingredients.  Everyone who eats them loves them. I mean who doesn’t love an Oreo.  Chocolate and creamy goodness!

Until now I have always used shortening in them.   I decided to try Coconut oil in them and they were delicious!  If you like Coconut and chocolate then you will love these!

The Coconut Oil keeps the cookies soft and the cream stiff.  Even after a couple of days (if they last that long) the cookies and the cream are amazing!

Here is the how to!

Coconut Cream Sandwich Cookies-Oreo’s

2 Boxes Devil’s food cake

1 1/2 C. Coconut oil (solid)

1 T. Vanilla

4 eggs

Melt Coconut oil. While melting mix cake mixes, eggs and vanilla lightly. Enough to beat the eggs.  Pour in oil.  Mix together completely. Use a cookie scoop or spoon to make one inch balls.  Place on greased cookie sheet and bake at 400* for 7 minutes.  Remove from pan to cooling rack.  Once cooled pair cookies by size.  Make frosting below and make a sandwich.

Frosting

1/4 C. coconut oil

2 C. powdered sugar

8 oz cream cheese, softened

1 t. vanilla

1/3 C. shredded Coconut

Melt coconut oil.  Add softened cream cheese and one cup of powdered sugar. Blend together with a mixer. Add remaining sugar and mix.  Fold in coconut.

These are a great make and share cookie for the neighbors, if you can give them up!

Ingredients
