Cheeseburger Soup {Recipe}

I love warm soup on a Cold snowy day. There is just something comforting about it. I try to have at least one dinner a week be soup.  This weeks recipe is one of my favorites, Cheeseburger Soup.  This creamy soup is packed full of flavor and veggies. Perfect for a cold winter day!

1/2 pound ground beef (Browned)
1T oil
3/4 C. finely chopped onions
3/4 C. shredded carrots
3/4 c. celery
1 tsp. Basil
1 tsp. parsley
4 T. butter
3 c chicken broth
4 C. peeled and diced potatoes
1/4 C. flour
3/4 tsp salt
1/2 tsp. pepper
11/2 C. milk
8 oz shredded cheese
1/4 c. sour cream

In a large pot, saute onions, celery, carrots, basil and parsley in 1 T oil until tender (about 10 min).  Add chicken broth, potatoes and hamburger. Simmer for 12-15 min until potatoes are tender.

In another pan melt butter and add flour. Cook and stir constantly for 3 minutes. Add milk, salt and pepper to flour and butter mixture.Cook until it thickens. Add to the pot of veggies. Stir together and remove from heat.

Add cheese and sour cream. Serve warm Wheat bread or breadsticks.

    Oh this is too funny, I had cheeseburger soup last night for the very first time. Sounds so weird, but tastes so good!!
