As the school year draws to a close, I find myself searching for a teacher gift. I want to do something for them that gives them an option. I like to give my teachers more than chocolate and Diet Coke.  So this year I came up with 2 options.  One for Ice Cream and the other for a Smoothie.  Because everyone loves Ice Cream and smoothies. Juicy, Parmesan Chicken {Recipe}

Have you been at a restaurant and bit into a delicious piece of juicy chicken with a crunchy outside shell?  Well this is exactly what you get.  I have a little trick up my sleeve on how to get the juiciest breaded chicken. Plain yogurt!  Its amazing.  Instead of coating your chicken in butter or egg use plain yogurt.  It’s healthier and tastes divine.  You cant even taste the yogurt!  So you want the recipe???  Keep on reading!
4 Chicken Breasts  (Flattened to about 1 inch thick)
1 sleeve Ritz Crackers
1/2 C. Parmesan Cheese
1T. Garlic salt
1 1/2 C. Plain Yogurt
 6 T. melted butter
Bake at 350* for 1 hour.
In a bag, smash one sleeve of Ritz crackers or 2 C. corn flakes but Ritz crackers are much better.  Mix together crackers, cheese and garlic salt.
Dip chicken breasts in yogurt then in cracker mixture. Make sure the cracker mixture is all over. Place flat in baking pan. Drizzle the chicken with melted butter. I like to cover my pan for 30 minutes and uncover for the last 30 minutes. Serve with your favorite roasted veggies or a salad. You can also serve with pasta and sauce.
I promise this meal is one for the family meal rotation.  It is delicious, even the kids will eat it!

Having a Smoothie every morning is a favorite around our house, every morning.  I try most days to get up and go to the gym then come home and get my kids on the bus. We go to school crazy early.  The bus comes at 7:30.  So my kids have to be fairly responsible  and get up and get going  on there own.  I am one of those moms that who makes my kids do their own lunch and then they have to have a healthy breakfast.  Like Eggs and bagels kind of breakfast.  I find that my kids do better in school when they have a breakfast packed with protein.  So when Carnation Breakfast Essentials came to my home, I was ecstatic to find out that each serving has essential vitamins and  13 grams of protein!  And its so easy to make my 6 year does it on her own!

Homemade Whole Wheat Tortillas Recipe

A few weeks ago I was planning an activity for a few of my young women.  I decided to teach the girls how to make Creme Brulee and Homemade Tortillas.  The Creme Brulee was to die for and I loved to tortillas.  At the time I was getting ready to start my 21 day fix.  So I wanted to make the tortilla recipe a little healthier so I went to work trying a few different things and came up with this delicious recipe. I used wheat flour and coconut oil to healthy them up.
Flour Tortillas
1 1/2 C. Whole wheat flour
2T. Vital Wheat Gluten
2 T. Coconut Oil
1/2 C. Warm Water
1/4 t. Sea Salt
1/4 t. Baking Soda
Mix flour and salt. Add oil and warm water, stirring to combine.  Dump dough out and knead for about 2-3 minutes until dough is smooth. Let dough rest for 20 minutes.  Divide dough into 7 equal pieces.   Press and cook with tortilla press (or you can use a rolling pin and skillet). Cook until lightly brown and dough is light in color.To make Wheat Thin Crackers divide your dough into to 8 pieces and cook them slightly longer. Use them for dips or salsa.

Homemade Knock Off Peanut Butter Twix Bars {Recipe}

I am a total kid of the 80’s.  Neon, Cyndi Lauper, Garbage Pail Kids and Cabbage Patch Dolls.  I remember it all.  There were so many foods I loved that are no longer on the market.Some of you may have remembered the Mars company had 4 kinds of Twix Bars.  Caramel, Peanut Butter, Cookies and Cream and Chocolate.  All of them are super delicious.  But, over time they slowly pulled each from the market except the caramel. So recently I started having a hankering for the Peanut Butter Twix. So I started thinking how could I make those. Then a wonderful company Chocoley, contacted me and asked if I wanted to try there products.  I jumped at the opportunity.  After checking out their products I thought this was the perfect opportunity to make my homemade Peanut Butter Twix.

I used this Shortbread Recipe  to make the base of the Twix bar. If someone already had a great recipe I don’t need to remake it! These babies are buttery smooth and have a great crunch.  I placed the dough in a large pan lined with parchment paper. Roll the dough to about 1/4 inch. I sliced the dough to be 1 inch by 5 inch strips before baking. Bake according to directions. Let them cool before adding filling.
For the filling I used a Peanut butter candy filling from Chocoley.   You have to try this stuff. Its crazy good. I love that they come already to roll and go. I comes in a plastic container ready to eat. And seriously people you could just eat this stuff with a spoon!
I used about 1tablespoon of filling and rolled them into a snake. Place it on top of one of your shortbread cookies. I pressed it down a bit to make sure it was sticking to the shortbread and to give it a flatter look. If you love the fillign part the best,  use a little more.  It’s up to you!
For my last step I melted down some delicious milk chocolate. With Chocoley’s milk chocolate you don’t have to temper your chocolate. It just melts perfect and drizzles on great.  I placed the cookies back on the parchment. I used a spoon to drizzle the chocolate on top of the shortbread and peanut butter.
Let the chocolate set and cool before packaging.
I whipped up these lovelies and gave them to my Young Women for an activity.  They were awesome.  A few of the girls questioned if they should eat them or not.  But once they had one bite there is no going back! They are yummy!
You could make these in any flavor you can imagine! Chocoley has a bunch of candy creme centers on there site, just ready to roll up and dip.  Making holiday candy just got a ton easier for making homemade chocolates!

To say this conference was amazing this year is an understatement. Over the course of 3 days I stayed up late like I was a college girl, ate delicious food I didn’t have to make, made new friends, hugged old friends and partied like it was 1985. I got to meet one of my favorite people.  He even held my hand. Eeekk! Alex Boye’ is amazing. His story, his dance moves and even his bald head.
